Kitchens can be a main source of pollutants in homes, particularly considering all the grease, smoke, undesirable odours, gas cooking by-products and moisture generated during the cooking process.

The supply of fresh air within a domestic kitchen is necessary for the health and safety of the occupants, as well as controlling condensation, often the dominant pollutant arising from moisture generated by the cooking smells and odours in the kitchen.

Condensation usually occurs when warm air comes into contact with a cooler surface, such as the walls, ceilings or windows of the kitchen, which can lead to the appearance of mould growth, peeling wallpaper or structural damage such as timber decay.

These problems result from poor ventilation and as moisture is the most significant pollutant, controlling it effectively through good ventilation is essential to avoid relative humidity exceeding 70% for any prolonged periods.

Local extract fans are installed in domestic kitchens to provide rapid extraction of moisture and other pollutants. They normally operate under occupant control or humidity control, or operate in association with door or light switches.

Fans can be window, ceiling or wall mounted but are most effectively located at high level away from the source of fresh air, for e.g. an internal door. In a kitchen they are ideally combined with a cooker hood. Ceiling mounted fans should be ducted outside; however it should be noted that ductwork lengths of as little as 1m can considerably impair performance as its an incorrect type of fan which has been fitted.

Fans can be controlled through manual switching or through being wired into door or light switches. Another option is humidity control, with the sensor positioned with consideration to where the major source of moisture is located.
